His dishes, and especially his rice dishes, allow us to savor his history, his trajectory and his aspirations. There is the recipe book learned at home -his mother is from Ontinyent, they grew up in Godella-, refined at school -he comes from the kitchens of the Basque Culinary- and evolved over years of work.
Constancy and professionalism that led him to become the winner of the International Valencian Paella Competition of Sueca 2022.
Al Grano bets on a safe cuisine for those looking for a local gastronomy, with no more innovation than that required by the passage of time. An honest and accessible cuisine, that neither pretends to be pure tradition nor avant-garde.
But it does aspire to one thing: to be present.

With more than 10 years of experience between Valencia and the Basque Country, she is in charge of making sure that every detail in our dining room is perfect.
